  • 3 eggs
  • 150 g sugar
  • 150 g flour
  • 1 teaspoon baking powder
  • 120 g unsalted butter
  • A pinch of salt

Preparation

  1. Preheat your oven to 180 °C (static heat).
  2. Chop the dehydrated fruits into small pieces if necessary to ensure even distribution.
  3. In a large bowl, whisk the eggs and sugar until the mixture becomes pale and slightly fluffy.
  4. Add the melted butter, then gradually incorporate the flour, baking powder and salt.
  5. Gently fold in the dehydrated fruits using a spatula.
  6. Pour the batter into a greased loaf pan and bake for 40 to 45 minutes.
  7. Check doneness with the tip of a knife; it should come out clean.

Chef’s tips

  • For an even softer cake, take the eggs and butter out of the refrigerator 30 minutes before starting.
  • Lightly coat the dehydrated fruits with flour before adding them to the batter to prevent them from sinking.
  • This recipe is easy to customise: add vanilla, cinnamon or a few nuts to vary flavours and textures.
