This moist dehydrated fruit cake is inspired by traditional homemade cakes, simple and comforting. It highlights the soft texture and aromatic richness of the dehydrated fruits selected by Passion du Fruit, for an accessible, generous and flavourful recipe.

Ingredients (6 to 8 servings)

  • 150 g Passion du Fruit dehydrated fruits (mango, pineapple, banana or a mix)
  • 3 eggs
  • 150 g sugar
  • 150 g flour
  • 1 teaspoon baking powder
  • 120 g unsalted butter
  • A pinch of salt

Preparation

  1. Preheat your oven to 180 °C (static heat).
  2. Chop the dehydrated fruits into small pieces if necessary to ensure even distribution.
  3. In a large bowl, whisk the eggs and sugar until the mixture becomes pale and slightly fluffy.
  4. Add the melted butter, then gradually incorporate the flour, baking powder and salt.
  5. Gently fold in the dehydrated fruits using a spatula.
