Bolo Rei – Traditional Portuguese candied fruit cake

Bolo Rei is a traditional Portuguese cake closely associated with the festive season. It is traditionally enjoyed between Christmas and Epiphany and holds a special place in Portuguese food culture.

Recognisable by its crown shape, Bolo Rei is similar to a rich brioche and stands out thanks to its generous use of candied fruits, raisins and citrus zest.

Introduced in Portugal at the end of the 19th century, Bolo Rei has become a symbol of sharing and celebration, still enjoyed today during family gatherings.

Ingredients

  • 500 g flour
  • 100 g sugar
  • 80 g butter
  • 25 g fresh yeast
  • 3 eggs
  • 100 ml warm milk
  • 150 g candied fruits
  • 50 g raisins
  • Pinch of salt
  • Orange or lemon zest
  • 1 egg yolk for glazing

Preparation

  1. Dissolve yeast in warm milk.
  2. Mix flour, sugar and salt.
  3. Add eggs, butter, zest and yeast.
  4. Knead until smooth.
  5. Add candied fruits and raisins.
  6. Let rise for 1½ hours.
  7. Shape into a ring and let rise again.
  8. Brush with egg yolk and bake at 180°C for 30–35 min.
