Ingredients (for about 8 scones):

250 g (2 cups) all-purpose flour

50 g (1/4 cup) sugar

1 packet of baking powder (about 2 tsp)

A pinch of salt

60 g (1/4 cup) cold butter, diced

100 g (3.5 oz) assorted candied fruits (cherries, orange peels, pineapple, etc.) from Passion du Fruit

150 ml (2/3 cup) milk

1 egg (for brushing)

Instructions:

1. Prepare the candied fruits:

Dice the candied fruits if necessary for even distribution.

2. Make the dough:

Preheat your oven to 200°C (400°F).

In a large mixing bowl, combine the flour, sugar, baking powder, and salt.

Add the cold butter and rub it into the dry ingredients with your fingertips until it resembles coarse crumbs.

Stir in the candied fruits.

Gradually pour in the milk, mixing gently with a spatula until the dough just comes together. Do not overmix.

3. Shape the scones:

On a lightly floured surface, roll out the dough to about 2–3 cm (1 inch) thick.

Use a round cookie cutter (or a glass) to cut out scones.

Place them on a baking tray lined with parchment paper.

4. Brush and bake:

Beat the egg and lightly brush the tops of the scones for a golden finish.

Bake for 12–15 minutes until the scones are golden brown.

5. Serve:

Allow the scones to cool slightly on a wire rack.

Serve warm, with butter, clotted cream, or jam.
