Candied Citron Tart
Ingredients:
- 1 shortcrust pastry (homemade or store-bought)
- 200 g candied citron
- 100 g sugar
- 3 eggs
- 100 g heavy cream
- 1 tbsp cornstarch
- Zest of 1 fresh citron
- 1 tsp vanilla extract
Preparation:
Prepare the pastry: If using homemade pastry, roll it out and fit it into a tart pan. If using store-bought pastry, simply line your pan and prick the base with a fork.
Prepare the candied citron filling: Chop the candied citron into small pieces and scatter them evenly over the pre-baked tart shell. Leave some space around the edges to prevent the citron from burning during baking.
Make the custard: In a bowl, whisk the eggs with the sugar until smooth. Add the heavy cream, cornstarch, and vanilla extract. Mix well until the mixture is smooth and creamy. Pour this custard mixture over the chopped candied citron in the tart shell.
Bake: Place the tart in the oven at 180°C (350°F) for about 30 minutes, or until the custard is set and lightly golden. Check the doneness by inserting a knife into the center; it should come out clean.
Finishing touch: Let the tart cool before removing it from the pan. For an extra burst of freshness, you can sprinkle some fresh citron zest on top.
